Prep time: 5 minutes

Cook time: 5 minutes

Makes: 1 large pancake

 

Ingredients:

- 1 cup egg whites

- 1/2 cup quick oats

- Optional: 1 scoop of protein powder

- Optional: a dash of cinnamon, flax seed

- 1/2 cup mixed berries

 

Instructions:

  1. Mix oatmeal, egg whites, and protein powder.
  2. Heat a large, cast-iron skillet or nonstick fry pan over medium-high heat.
  3. Coat the pan with coconut oil cooking spray.
  4. Pour the pancake batter onto the pan in a thin layer.
  5. Cook the pancake for 2 minutes on each side or until golden brown.
  6. Drizzle with 2 tbsp sugar-free syrup and 1/2 cup of mixed berries or other fruit.
